Watermelon Pudding

Watermelon pudding is extremely rich and flavorful. 
Sweet cooked watermelon pudding is studded with chocolate chunks and nuts. 

Ingredients :-
Watermelon  - Medium size ; 
Sugar - 1/2 cup ;
Corn starch - 1/4 cup ;
Cinnamon - Pinch ;
Chopped Nuts & chocolate chunks - for garnishing ; 
Whipped cream & chocolate sauce ; (optional)

Preparation :-
1). Cut watermelon into chunks, remove rind and seeds. Puree the watermelon chunks in a blender until smooth.
2). Drain the pureed flesh through a colander into a bowl, pushing the pulp against the sides of the colander to extract as much juice as possible.  
3). Measure out 4 & 1/2 cups of juice and discard the pulp.  Keep the remaining juice aside.

4). Ladle about 1/4 cup watermelon juice(remaining juice) into a small bowl and stir in cornstarch until smooth.
5). Bring 4 & 1/2cups watermelon juice to a boil with sugar, stirring until sugar is dissolved.  
6). Stir cornstarch mixture again, then whisk into boiling juice. Reduce heat and simmer, whisking occasionally, 3 minutes.
7). Cook over medium heat, using a wooden spoon or flexible spatula to stir and scrape the sides and bottom of the pot.

8). Let boil for a few minutes until the pudding is bright red. 
9). Stir in the cinnamon and let it boil for another two minutes.
10). Pour into a bowl and refrigerate uncovered  until cold for about 30 minutes. Cover loosely and chill until set, at least 3 hours.
When cool, stir in chocolate pieces, chopped nuts and top it with whipped cream.
If you wanna have it plain just top it with whipped cream and chocolate sauce.
